1 · The Concept

We're converting an old trailer into a full commercial-style camp kitchen: a propane cook line, real refrigeration with a walk-up cold box, commercial prep surfaces, a proper cleaning station, and e-track storage so everything survives the Boulder → Black Rock City haul.

Design drivers: food safety in 100°F dust, fast crew meals during build week, and a layout where the messy stuff (dishes, greywater, handwash) lives outside the trailer.

2 · Meal Strategy: Frozen Boil-in-Bag

The big idea (kitchen planning doc, 7/25): we're pre-ordering fully cooked, frozen meals. The kitchen reheats and serves — it doesn't cook. Bags go into a large pot of boiling water, ~30–45 minutes per batch. The big propane burner is the workhorse; the camp stoves drop to backup duty (coffee, eggs, quick items).

Why it wins on playa: almost no cooking mess → dramatically less dishwater · no raw-prep food-safety surface → simpler sanitation · predictable service times → happier, fed turtles. 🐢

Propane tank math (why 20 lb tanks alone don't cut it): each range can pull 150k BTU/hr, but a 20 lb cylinder can only deliver ~90–110k BTU/hr before it freezes up. A 40 lb tank delivers ~150–185k BTU/hr, a 100 lb tank 300k+. If you'll run burners hard, size the cylinders to the draw — or run two tanks with a switchover.
⚠️ Safety: Propane is heavier than air — it pools low. Ventilate at floor level, keep tanks outside, and never store cylinders inside the trailer. Fire extinguisher within reach of every cook station. This playbook documents our plan — for anything structural, electrical, or gas, defer to your camp's qualified people.
⚡ Power rules (David sync 7/16): camp grid = ~2× 70A drops (5-ga, NEMA-6) feeding mobile sub-panels. No electric heat appliances this year — no microwave, no coffee machine, no toaster oven; all heat = propane (coffee = pump pots + #6 cone filters). Backbone: 10-ga 100 ft cords + 10-ga triple taps. Trailer cable penetrations go through the floor, never the walls. Report the camp's draw number to David — it sizes his hub.

6 · Prep, Storage & Transport

  • Prep: 4× Regency 30×72" stainless work tables (18-gauge 304 SS, galvanized undershelf) + anti-fatigue mats + magnetic knife strip + utensil rail.
  • Dry storage: 4× NSF wire shelving units, food-grade stackable bins, pest-resistant dry-goods containers, 27-gal totes (20).
  • Transport: e-track rails + straps + ratchets keep appliances and shelving locked down for the haul. Butyl tape on the trailer roof. Spare tire + wheel-bearing service before departure.
  • Access: folding entry step, folding tables (4× 8 ft) for serving lines.
  • Ventilation: range hood in the build, plus low/floor-level venting (propane pools low), box fans + 12V circulation fans.

7 · The Safety Kit
